Quiche in a Mug

Quiche in a Mug

No need to whip out the skillet for eggs! Save time, and a few dishes, too!

Ingredients

  • 1 Tbsp almond milk
  • black pepper to taste
  • 2 Tbsp bread chopped/cubed
  • 1 Tbsp cheese low fat (optional)
  • 2 tsp dijon mustard
  • 2 eggs or egg whites, or combo
  • 3-4 grape tomatoes quartered
  • 2 Tbsp green onion
  • salt to taste
  • 1 Tbsp spinach chopped
  • Procedure

  • Whisk together eggs, milk, salt & pepper, and Dijon mustard.
  • Mix in vegetables.
  • Stir in bread cubes and submerge to soak.
  • Top with cheese.
  • Microwave 120–150 seconds.
  • Allow to cool 2-3 minutes before devouring.
