Pumpkin Spice Overnight Oats

Tired of your overnight oats routine? You don’t have to be! Overnight oats are an insanely simple meal prep breakfast, and you can flavor them in SO many ways. This recipe includes a base recipe for your dry oats, which you can portion into jars and flavor in a DIFFERENT way every day! I love this pumpkin spice flavor, but I also highly recommend the coconut vanilla and PB&J flavors! (See recipe procedure for ingredients.) And, as always, go ahead and get creative with your favorite flavors!

Ingredients

Base Recipe
  • 1/4 tsp cinnamon
  • 1/2 cup milk of choice (add night before eating)
  • 1/2 cup oats
  • pinch of salt
  • 1 tsp sweetener of choice
  • Pumpkin Spice Flavorings
  • 2 Tbsp canned pumpkin puree
  • 1/8 tsp cinnamon
  • 3 Tbsp pecans (chopped)
  • 1/4 tsp pumpkin pie spice
  • Procedure

  • For meal prep, decide how many servings of overnight oats you want for the week.
  • Multiply the recipe by the number of servings you want, and add your dry ingredients to a large airtight storage container. Mix to combine. This is a simple overnight oats base you can flavor in tons of different ways throughout the week! Or, you could also divide each serving of dry ingredients into individual jars if you prefer.
  • The night before you want to enjoy your oats, add ½ cup of your base mixture to a jar.
  • Add flavorings and wet ingredients. For this recipe I used canned pumpkin, pumpkin pie spice, cinnamon, and chopped pecans. Pour in milk of choice and stir to combine.
  • But you can also get creative with other flavors! I love coconut vanilla (2 Tbsp coconut shreds, ½ tsp vanilla extract, & coconut milk) and PB&J (1 Tbsp peanut butter or powdered peanut butter, 1 Tbsp jelly, ¼ cup chopped strawberries, & milk of choice)!
  • Store prepped oats jar in the fridge overnight. In the morning, stir, serve, and enjoy!
  • Yields 1 serving overnight oats.
