Oatmeal is one of the healthiest and heartiest breakfasts you can eat! This pumpkin pie version is creamy, sweet, and savory. It’s sure to keep you full, perfect for any budget, and will keep you coming back for more!
2 Tbsp Canned pumpkin puree
2 Tbsp Chopped almonds
1/8 tsp Cinnamon
pinch of Cloves
pinch of Ginger
1 Tbsp Maple syrup to taste
1/2 cup Milk non-dairy for vegan and dairy-free
pinch of Nutmeg
1/3 cup Oats rolled, or whichever you prefer
1/8 tsp Vanilla extract
Combine oats and milk in a saucepan over medium heat.
Bring to a boil.
Reduce to a simmer, stirring occasionally until desired consistency is reached (3-5 minutes).
Stir in pumpkin pureé, vanilla extract and spices until heated through, around 1 minute.
Stir in chopped almonds and maple syrup to taste. Enjoy!
