Pumpkin Mini Muffins

Pumpkin Mini Muffins

These guilt-free babies are only 18 calories each, so you can keep popping’ them all day long! I may or may not have eaten 6 right out of the oven! You can freeze these for later, too!

Ingredients

  • 1/4 cup almond milk
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup canned pumpkin puree
  • 1 tsp cinnamon
  • 3/4 cup egg whites
  • 1 1/2 cups oat flour
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/3 cup stevia
  • 1/2 tsp vanilla extract
  • Procedure

  • Bake for 10-12 minutes.
  • Divide evenly into mini muffin tin previously sprayed with olive oil cooking spray. I got 30 mini muffins out of my batter!
  • Mix dry ingredients and wet ingredients separately, and then combine.
  • Preheat oven to 325F.
