Pineapple Shrimp Skewers

Pineapple and shrimp are a classic combo! This easy marinade is a great way to get more seafood into your diet, but is also awesome with chicken!


  • 1/4 cup balsamic vinegar
  • 1/4 tsp black pepper
  • 1 tsp garlic
  • 2 Tbsp honey
  • 2 tsp lemon juice
  • 3 cups pineapple chopped in large pieces
  • 1/2 tsp salt (adjust to taste)
  • 1 pound (LB) shrimp large
  • 1/4 cup soy sauce low sodium
  • wooden skewers Soaked
  • Procedure

  • Combine all ingredients except for pineapple and shrimp in a bowl. Adjust marinade to taste.
  • Soak shrimp and pineapple in marinade for 1 hour.
  • Preheat oven to 400F.
  • Thread pineapple and shrimp onto skewers as desired.
  • Transfer skewers to baking sheet lined with foil and topped with a grid rack (if you don’t have a rack it’s fine, just be sure to flip the skewers halfway through).
  • Brush remaining marinade over skewers
  • Bake 10 minutes, until shrimp are pink and cooked through.
  • Garnish with green onion and devour!
