Pineapple and shrimp are a classic combo! This easy marinade is a great way to get more seafood into your diet, but is also awesome with chicken!
1/4 cup balsamic vinegar
1/4 tsp black pepper
1 tsp garlic
2 Tbsp honey
2 tsp lemon juice
3 cups pineapple chopped in large pieces
1/2 tsp salt (adjust to taste)
1 pound (LB) shrimp large
1/4 cup soy sauce low sodium
wooden skewers Soaked
Combine all ingredients except for pineapple and shrimp in a bowl. Adjust marinade to taste.
Soak shrimp and pineapple in marinade for 1 hour.
Preheat oven to 400F.
Thread pineapple and shrimp onto skewers as desired.
Transfer skewers to baking sheet lined with foil and topped with a grid rack (if you don’t have a rack it’s fine, just be sure to flip the skewers halfway through).
Brush remaining marinade over skewers
Bake 10 minutes, until shrimp are pink and cooked through.
Garnish with green onion and devour!
Serving: 1 skewer
