One of my favorite easy week-night meals–only 3 ingredients! I love using my homemade pesto, but any pesto will of course do! I also add in goat cheese because it complements the basil quite well, but can easily be omitted and will still be delicious!
black pepper to taste
8 oz chicken breast boneless skinless
1 oz goat cheese
1/4 cup pesto
salt to taste
Preheat oven to 425F.
Place your breast(s) between layers of plastic wrap and use a mallet to pound out to about 1/2
Spread 1/2 of the pesto on each breast of chicken.
Distribute 1/2 of the goat cheese on each breast of chicken covered in pesto.
Sprinkle with salt & pep.
Roll up the breast and place on a baking sheet lined with foil, seam side down.
Sprinkle tops with salt & pep.
Bake for 22-25 minutes, until cooked through completely.
Garnish with a sprinkle of parmesan.
