This is the first flourless and gluten free cookie that I’ve made that actually tastes like a cookie! Thanks to the peanut butter, we have the fat we need to create that delectable chewy texture that a real cookie should have! Keep in mind, though– while these are made with healthier and wholesome ingredients, they should still be consumed in moderation as they are high in fat from the peanut butter. On the flip side, they are lower in carbs and higher in protein than a traditional cookie!
3 Tbsp chocolate chips dark (or more…)
1 cup peanut butter or almond butter
1/4 tsp salt
1/4 cup sweetener
Preheat oven to 350°F.
Combine the first four ingredients until a creamy, well incorporated mixture forms.
Stir in your chocolate chips.
Spoon tablespoon sized balls of dough (a cookie scooper works great) onto a baking sheet lined with parchment and sprayed. Press/smush your cookies down on the tops so they are flattened a bit, as the
Bake for 10-12 minutes, until beginning to brown. They will firm up a bit as they cool.
Allow to cool slightly before devouring!
