This pea soup is SO delicious and creamy– with only 3 INGREDIENTS!!! I absolutely LOVE the texture of this easy, convenient soup. Perfect for weeknight meals or meal prep! It’s cheap, tasty and a weekly go-to for me through the chilly months!
1 bag of Frozen baby peas
2 tsp Olive oil
3/4 tsp Salt
2 cups Vegetable broth
Pour your broth into a large pot and bring to a boil.
Once boiling, add in your frozen peas.
Allow to cook in the pot until the peas have thawed.
Remove your pot from the heat and allow to cool slightly before transferring to your blender or food processor.
Blend up the peas and broth, and integrate your olive oil and salt as it blends, seasoning to taste. I like to let this blend until it’s REALLY silky smooth, around 2 minutes.
Serving: 2 cup
