Onion Rings

These are perfectly crunchy and crisp… surprising for something that’s BAKED and not FRIED! A lovely salty treat, that I immediately devoured just out of the oven! Remember, an onion is a vegetable! Now that these aren’t covered in fried batter, we can once again consider this a solid serving of veggies!

Ingredients

  • 2 tsp bread crumbs
  • 1/3 cup cornflakes
  • 3 Tbsp egg whites
  • 1/2 tsp garlic powder
  • 1/4 cup greek yogurt
  • 1/3 cup oats
  • olive oil
  • 1/4 tsp onion powder
  • 1 onions
  • pepper
  • salt
  • Procedure

  • Preheat oven to 425F.
  • Combine corn flakes, oats, garlic powder, onion powder, bread crumbs, and salt/pepper in a flat dish (or tupperware).
  • Combine greek yogurt, and egg whites into another flat dish (or tupperware).
  • Coat onion rings in the greek yogurt mixture (I put the lid on the tupperware and shook ’em up), and then dredge the corn flakes mixture, covering completely (you will not use all of dredging mixture)
  • Place on a baking sheet lined with foil and sprayed with olive oil cooking spray, and spray a little of the cooking spray ON the onion rings as well.
  • Cook for 10-12 minutes.
