One-Pot Veggie Spaghetti

One-Pot Veggie Spaghetti

A delicious spaghetti dish that’s packed with veggies, and it can be made in just ONE POT! This recipe is a convenient way to meal prep for busy weeknights and family dinners – makes enough for leftovers!

Ingredients

  • 1/4 cup almond milk
  • 1/2 cup chopped onion
  • 2 garlic cloves minced
  • 2/3 cup green peas
  • 1 pound (LB) mushrooms sliced
  • 2 tsp olive oil
  • 1/3 cup parmesan cheese
  • 3/4 tsp salt
  • 1 pound (LB) spaghetti (or other pasta)
  • 2 cups spinach
  • 2 sprigs of thyme
  • 4.5 cups water
  • 2 zucchini sliced/quartered
  • Procedure

  • In a pot over medium heat, sauté onions and garlic in a bit of olive oil.
  • Add spaghetti, mushrooms, zucchini, peas, thyme salt and water.
  • Bring to a boil. Turn down to a simmer and let sit uncovered until the pasta is cooked through and liquid has reduced (10-12 minutes).
  • Stir in the spinach, parmesan and almond milk, until spinach has wilted (2-3 minutes).
  • Serve!
