This dinner is easy to make and SO budget-friendly! The lentils and rice make for a hearty meal, it’s full of delicious seasonings, and it’s vegan!
4 Avocados for topping
1/2 tsp Cinnamon
1 tsp Cumin
4 Garlic cloves
1 1/2 cups Red lentils
2 cups Rice (basmati)
1 tsp Salt
7 cups Water
Add lentils, water, garlic and spices to a pot over medium high heat.
Cook for 25 minutes, until lentils are soft. Add rice and salt.
Return to a boil, turn heat to low, and simmer for about 20 minutes.
Top each serving with 1/4 of a sliced avocado!
