One Pot Lentils & Rice

This dinner is easy to make and SO budget-friendly! The lentils and rice make for a hearty meal, it’s full of delicious seasonings, and it’s vegan!

Ingredients

  • 4 Avocados for topping
  • 1/2 tsp Cinnamon
  • 1 tsp Cumin
  • 4 Garlic cloves
  • 1 1/2 cups Red lentils
  • 2 cups Rice (basmati)
  • 1 tsp Salt
  • 7 cups Water
  • Procedure

  • Add lentils, water, garlic and spices to a pot over medium high heat.
  • Cook for 25 minutes, until lentils are soft. Add rice and salt.
  • Return to a boil, turn heat to low, and simmer for about 20 minutes.
  • Top each serving with 1/4 of a sliced avocado!
