Mint Chocolate Chip Waffle

MINT CHOCOLATE CHIP + WAFFLE + GUILT FREE!? What more do I need in life? And if you’ve tried my waffles, you know they’re PACKING that protein without any powder at all! Great as pancakes, too!


  • 1 tsp baking powder
  • 2 tsp chocolate chips to taste
  • 1.5 Tbsp coconut flour
  • 1/4 cup cottage cheese
  • 1/2 cup egg whites
  • 1/4 cup fresh mint
  • 1 tsp mint extract
  • 1/4 cup oats
  • 1/2 cup spinach
  • 1/2 tsp stevia to taste, or sweetener of choice
  • Procedure

  • Combine all ingredients except for chocolate chips in a blender/food processor. Pour into preheated waffle maker and add chocolate chips. Cook according to waffle maker directions.
  • Top with chocolate syrup, regular syrup, or even more chocolate chips!
  • Devour
