Mango Shrimp Salad

A refreshing cool summer salad that’s PACKED with protein and flavor, with only a few ingredients! Delicious in a taco, on a sandwich, or even on it’s own!

Ingredients

  • 1/2 avocado cubed
  • 3 Tbsp cilantro chopped
  • 1/4 tsp garlic powder
  • 1/3 cup greek yogurt
  • 3 Tbsp lime juice
  • 1 mango cubed
  • 1/8 tsp paprika
  • 1/4 cup red onion chopped
  • 1 1/2 cups salad shrimp (thawed)
  • pinch of salt
  • Procedure

  • Combine Greek yogurt, cilantro, lime juice and salt.
  • Lightly toss remaining ingredients in the yogurt
  • Chill 2-3 hours.
  • Serve in your favorite tortillas, on a sandwich, or as is!
