Combine two of my favorite foods: cheeseburgers, and macaroni and cheese, and you cannot go wrong! This casserole is packed with healthy protein and carbs to fuel your day!
1/4 cup almond milk
1 beefsteak tomato chopped
black pepper to taste
2 cups cheddar low fat, sharp
3 Tbsp garlic minced
1/4 tsp garlic powder
2/3 cup greek yogurt
1 pound (LB) ground beef I use lean 96/4, but lean ground turkey breast will also work
1/4 tsp onion powder
1/2 cup onions chopped
8 oz pasta gluten free if preferred
salt to taste
2 cups spinach chopped
Preheat oven to 400ºF.
Saute´ onion and garlic in a skillet in cooking spray. Once onions are translucent, add beef and spinach, and season with salt & pep. Saute´ until spinach is wilted and meat is completely cooked throu
Cook pasta according to package directions until al dente. Drain water and return pasta to the hot saucepan. Add milk, 1 3/4 cups shredded cheese, Greek yogurt, and seasonings, coating pasta completel
Stir meat mixture and tomato into the saucepan with the macaroni and cheese.
Transfer to a large sprayed baking dish (9×13
Bake 15 minutes, until cheese is melted and lightly browned. Top with green onion if desired before serving!
