Mac & Cheeseburger Casserole

Mac & Cheeseburger Casserole

Combine two of my favorite foods: cheeseburgers, and macaroni and cheese, and you cannot go wrong! This casserole is packed with healthy protein and carbs to fuel your day!

Ingredients

  • 1/4 cup almond milk
  • 1 beefsteak tomato chopped
  • black pepper to taste
  • 2 cups cheddar low fat, sharp
  • 3 Tbsp garlic minced
  • 1/4 tsp garlic powder
  • 2/3 cup greek yogurt
  • 1 pound (LB) ground beef I use lean 96/4, but lean ground turkey breast will also work
  • 1/4 tsp onion powder
  • 1/2 cup onions chopped
  • 8 oz pasta gluten free if preferred
  • salt to taste
  • 2 cups spinach chopped
  • Procedure

  • Preheat oven to 400ºF.
  • Saute´ onion and garlic in a skillet in cooking spray. Once onions are translucent, add beef and spinach, and season with salt & pep. Saute´ until spinach is wilted and meat is completely cooked throu
  • Cook pasta according to package directions until al dente. Drain water and return pasta to the hot saucepan. Add milk, 1 3/4 cups shredded cheese, Greek yogurt, and seasonings, coating pasta completel
  • Stir meat mixture and tomato into the saucepan with the macaroni and cheese.
