Low Carb Cookie Dough Fudge

Sweet, indulgent fudge that’s gluten-free, dairy-free, low carb, and SUGAR-FREE?!? Can it be?? Yes indeed, with this healthy holiday fudge recipe! Cacao butter and raw cashews give it the creamy, luscious texture of a traditional fudge. But, using a low carb fiber syrup means this treat has NO added sugars (depending on the kind of chocolate chips you use, of course). And, if you use dairy-free chocolate chips, this healthy fudge is vegan!


  • 1/2 tsp butter extract
  • 8 oz cacao butter
  • 1/2 tsp dark chocolate chips
  • 3/4 cup low carb fiber syrup
  • 1 cup raw cashews soaked (about an hour) & drained
  • vanilla paste
  • Procedure

  • In a food processor or blender, blend soaked cashews, fiber syrup, vanilla paste, and butter extract.
  • In a double boiler, melt cacao butter.
  • Add blended mixture into melted cacao butter over heat and whisk to combine.
  • Remove from heat and whisk to be sure there are no chunks.
  • Transfer to loaf pan lined with foil. Sprinkle on chocolate chips.
  • Freeze 4-6 hours or overnight, until firm. Remove from freezer and slice into cubes with a sharp knife.
  • Serve and enjoy!
  • Will melt at room temperature, so store in an air-tight container in the freezer! Lasts 1-2 months in the freezer.
