What to do with all those thanksgiving leftovers? Don’t just keep eating the turkey for every meal, switch it up with my leftover Thanksgiving turkey club casserole! It’s like a hot and cheesy club sandwich in a casserole, yum!
1/4 cup almond milk
4 slices bacon regular or turkey
black pepper to taste
3 slices bread gluten free if desired
1/3 cup cheddar low fat, shredded
1-2 Tbsp dijon mustard sweet
1 Tbsp garlic minced
1 cup greek yogurt
1/2 cup onions chopped
1 Tbsp red wine vinegar
salt to taste
2 cups spinach
1 cup tomatoes diced
3 cups turkey leftover
Start by sautéing up your onions and garlic until the onions are nice and translucent.
In a separate bowl, combine all ingredients (INCLUDING the sautéd onions and garlic) except for the bread and the cheese.
Once well combined, gently integrate the bread cubes, be careful not to break them up too much!
Spray a large baking dish with cooking spray and pour in your turkey club mixture.
Sprinkle the top with your shredded cheese, and bake in an oven preheated to 375ºF for 20-25 minutes.
Remove and enjoy!
