Tired of meatless tacos and burritos filled with black beans and more black beans? Give jackfruit a try! It’s actually a low-calorie, high-fiber fruit that has the look and feel of meat when unripe. And it can fool your taste buds, too! Unripe jackfruit has a mild taste, so it will take on all of the savory, spicy, delicious flavors of your taco seasoning. Cook it up with some caramelized onions for an irresistible vegan taco filling!
1 can of jackfruit (in brine or water, not syrup) drained (10 ounces)
1 small onion thinly sliced
taco seasoning to taste
Heat oil in a pan over medium heat.
Add thinly sliced onion and sauté 6-8 minutes, until softened and caramelized.
Meanwhile, shred jackfruit. (I prefer to drain and rinse mine so it doesn’t have the brine taste!)
Add jackfruit to the pan with taco seasoning and stir to integrate. (Add a splash of water or vegetable broth to moisten if needed!)
Cook for another 6-8 minutes until the jackfruit is cooked through and beginning to crisp on the edges.
Serve on tacos, in a burrito bowl, or on its own and enjoy!
