Horchata! It’s a delicious traditional Mexican beverage made with rice, and it is SO refreshing on those hot summer days! Most recipes are packed with sugar, so I’m using stevia to lighten the sugary load– but feel free to use any sweetener you prefer! Today we’re upping the nutrition of the beverage by using brown rice instead of white!
1 Tbsp cinnamon
2 cinnamon sticks
1 cup long grain brown rice uncooked
1/3-1/2 cup sweetener
8 cups water
Soak rice and 4 cups of the water with cinnamon sticks for 4 hours to overnight.
Discard the cinnamon sticks and blend the rice and water mixture along with stevia and ground cinnamon on HIGH for about 3-5 minutes, until SUPER finely ground.
Add additional 4 cups water and pulse to combine.
Pour the mixture through nut milk bag, or a strainer lined with cheese cloth to get rid of any grainy bits and pulp.
Chill the horchata before enjoying. It will separate, so stir before serving over ice.
Serving: 8 oz glass
