Holiday Bean Salad

This bean salad is a tasty, fresh option to bring with you to a holiday potluck! You can also eat it with lunch or dinner, enjoy it as a snack, or use it as a flavorful dip. It’s so versatile, so yummy, and full of veggies and protein!

Ingredients

  • 1 can of Black beans drained & rinsed
  • 2 stalks Celery
  • 1 Tbsp Fresh mint chopped
  • 2 Tbsp Fresh parsley chopped
  • 1 can of Garbanzo beans drained & rinsed
  • 2 Garlic cloves minced
  • 6 Gherkins chopped
  • 1 can of Kidney beans drained & rinsed
  • 1 Lemon juice & zest
  • 1 Tbsp Olive oil or grapeseed oil
  • 1/2 tsp Pepper to taste
  • 1/2 cup Red onion chopped
  • 1/2 tsp Salt to taste
  • 1 tsp White wine vinegar
  • Procedure

  • Toss all ingredients together and coat completely.
  • Chill and enjoy!
