1 can of Black beans drained & rinsed
2 stalks Celery
1 Tbsp Fresh mint chopped
2 Tbsp Fresh parsley chopped
1 can of Garbanzo beans drained & rinsed
2 Garlic cloves minced
6 Gherkins chopped
1 can of Kidney beans drained & rinsed
1 Lemon juice & zest
1 Tbsp Olive oil or grapeseed oil
1/2 tsp Pepper to taste
1/2 cup Red onion chopped
1/2 tsp Salt to taste
1 tsp White wine vinegar
Toss all ingredients together and coat completely.
Chill and enjoy!
