Take a vegetable and turn it into DELICIOUS fries! You’ve seen me do it with carrots, asparagus, tofu, onions (rings), okra, and avocado… and now is the time for GREEN BEANS! Check out the YouTube Episode from Season 1 to see my process with these!
1/2 cup egg whites
1/2 tsp garlic powder
1/4 cup greek yogurt
1 cup green beans
3/4 cup oats
1 oz parmesan grated
Mix the egg, egg whites, greek yogurt, and a little salt and pep in a tupperware container.
Soak trimmed green beans in mixture and allow to refrigerate for 20-30 minutes.
Pulse oats lightly in processor.
Combine oats, garlic powder, and salt and pep in a second tupperware container (make sure you have the lid).
Once green beens have chilled, remove from the refrigerator and place a in the container with the breading mixture.
Put on the lid and shake ’em up!
Repeat until all green beans are finished (you will only use about 2/3 of mixture, which is accounted for in nutrition).
Place the green beans on a baking sheet covered in foil and sprayed.
Spray the green beans with a little extra cooking spray.
Bake in the oven at 425ºF for about 15-20 minutes.
Serving: 1/2 cup
