Savor the flavors of a comforting apple pie—in this healthy VEGAN smoothie! Green apples create that classic sweet-and-tart taste we love in apple pie. And, they’re more nutrient dense than red apples! Coconut milk makes this smoothie deliciously thick, and I like to blend in some spinach as well. You won’t taste the spinach at all, but you’ll be sneaking in more nutrients and a natural green color!
1/4 cup apple juice
pinch of cardamom
1/4 tsp cinnamon
1/2 cup coconut milk
1 Tbsp coconut sugar
1 green apple (peeled if preferred)
pinch of nutmeg
1/2 cup oats
1 cup spinach
1/2 tsp vanilla extract
Add all ingredients to a blender and blend until smooth.
Pour into a glass, serve, and enjoy!
I like to top mine with some toasted coconut flakes, but you can use any toppings you prefer!
