Granola Muffins

Wholesome ingredients, gluten free, and totally delectable!


  • 1/2 cup almond milk or milk of choice
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup brown sugar or coconut
  • 1 tsp cinnamon
  • 1/4 cup coconut oil
  • 1 egg
  • 1 cup granola clusters (I like KIND Healthy Grains Clusters for lower sugar) + additional for topping
  • 1 cup greek yogurt plain
  • 2 cups oat flour (I use certified GF oats and blend them up in a processor)
  • 1/2 tsp salt
  • 1/3 cup stevia + 1 Tbsp (to taste)
  • 1 tsp vanilla
  • Procedure

  • Preheat oven to 400F.
  • Combine wet and dry ingredients separately, except for granola clusters.
  • Combine wet and dry mixes together, thoroughly combining.
  • Gently crush up your granola clusters. I like to leave mine slightly clustered to keep the unique texture.
  • Stir the clusters into your mixed batter.
  • Spoon the batter into a sprayed muffin tin. I use an ice cream scoop to get a perfect 12 muffins.
  • Sprinkle additional (optional) crumbled granola clusters on top of the batter for a beautiful muffin topping.
  • Bake for 16–18 minutes, until a toothpick comes out clean and golden brown.
  • Allow to cool slightly before removing and devouring.
