Wholesome ingredients, gluten free, and totally delectable!
Ingredients
1/2 cup almond milk or milk of choice
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup brown sugar or coconut
1 tsp cinnamon
1/4 cup coconut oil
1 egg
1 cup granola clusters (I like KIND Healthy Grains Clusters for lower sugar) + additional for topping
1 cup greek yogurt plain
2 cups oat flour (I use certified GF oats and blend them up in a processor)
1/2 tsp salt
1/3 cup stevia + 1 Tbsp (to taste)
1 tsp vanilla
Procedure
Preheat oven to 400F.
Combine wet and dry ingredients separately, except for granola clusters.
Combine wet and dry mixes together, thoroughly combining.
Gently crush up your granola clusters. I like to leave mine slightly clustered to keep the unique texture.
Stir the clusters into your mixed batter.
Spoon the batter into a sprayed muffin tin. I use an ice cream scoop to get a perfect 12 muffins.
Sprinkle additional (optional) crumbled granola clusters on top of the batter for a beautiful muffin topping.
Bake for 16–18 minutes, until a toothpick comes out clean and golden brown.
Allow to cool slightly before removing and devouring.
