This deliciously powerful pop is LOADED with vitamins, antioxidants, and even fiber! (That’s right, fiber in a popsicle.) Use sparkling water for a fun twist on traditional pops!
Ingredients
2 cups carbonated water
1/2 cup freshly squeezed lemon juice (three large lemons yields)
1/4 cup honey (or simple syrup, for real lemonade)
1 cup raspberries
Procedure
Muddle raspberries. Add honey and squeeze lemon juice.
Pour in carbonated water and mix to integrate.
Pour mixture into popsicle molds, cover, and insert sticks.
Freeze 6-8 hours or overnight.
Once frozen, remove desired pops from mold and enjoy! (You may need to allow pops to sit outside of the freezer for a minute or two in order to easily remove from mold.)
You can leave pops in molds in freezer for a few days.
For longer storage, remove from molds and place in individual freezer bags, or in an airtight plastic container with layers of wax paper or plastic wrap in between. Will last 3 to 4 weeks stored this way.
