Edamame Quinoa Salad

Edamame Quinoa Salad

My local grocery store has a delicious edamame salad (which inspired this recipe), but it is SO oily! The excess in oil is really unnecessary. Instead, I just use a small amount of oil for flavor, and let the natural flavor of the ingredients do the talking!

Ingredients

  • 2 bell peppers chopped
  • black pepper to taste
  • 1 cup celery diced
  • 1 can of chickpeas 15 oz, drained & rinsed
  • 1/4-1/2 cup cilantro chopped, to taste
  • 1 cup corn frozen/thawed
  • 16 oz edamame frozen/thawed
  • 2 oz feta cheese optional
  • 2 lemons juice
  • 2 limes juice
  • 2 Tbsp olive oil
  • 1 cup quinoa cooked
  • salt to taste
  • Procedure

  • Whisk together liquid ingredients and seasonings for dressing in a large mixing bowl. Adjust to taste.
  • Add salad ingredients and toss well to coat.
  • Transfer to a container for storage.
  • Lasts 4-5 days in the fridge.
