Easy Mexican Rice

For a quick and delicious dinner, or as part of your mea prep for the week, try this EASY Mexican rice recipe! A healthy, budget-friendly dish you can use in so many ways – and it’s totally vegan!


  • 2 cups broth
  • 1/4 cup cilantro chopped
  • 2 tsp garlic powder
  • 3 cups minute brown rice uncooked
  • 2 tsp onion powder
  • pepper to taste
  • salt to taste
  • 1.5 cups tomato sauce
  • Procedure

  • Add everything (except cilantro) to a pot and bring to boil.
  • Reduce heat to a simmer and cover, until all liquid is absorbed (about 15 minutes).
  • Remove from heat and stir in cilantro.
  • Enjoy!
