You’ve never had a quesadilla this creamy and this nutritious! The avocado and chickpeas create a smooth, hearty texture, and they’re also packed with protein and healthy fats! It’s so tasty, you won’t even notice the kale that’s snuck into the recipe!
1/4 cup Chickpeas
1/4 cup Kale
3 Tbsp Sharp cheddar cheese
1 Whole wheat tortilla medium
Mash the chickpeas and avocado together with a fork. Spread mixture onto tortilla.
Layer other ingredients on top, covering half of the tortilla.
Fold over the tortilla and transfer to a sprayed pan over medium-high heat.
Cook for 3-5 minutes, until golden brown, and then flip to cook the other side. Enjoy!
