One great way to lighten up pasta salad, is by making the entire dish have more volume using other healthier ingredients, like vegetables and protein! This creamy salad is perfect as a cold lunch and will satisfy that pasta craving!
1/2 avocado cubed
1/4 tsp black pepper to taste
4 oz chicken breast shredded
3 Tbsp cilantro chopped
1/2 cup greek yogurt
2 tsp lime juice
1 tsp olive oil
1/4 tsp salt to taste
9 oz tortellini of choice cooked & cooled (I used a 9oz package, about 2.5 cups cooked)
Combine chicken, tortellini and cilantro.
Combine your Greek yogurt, olive oil, lime juice, and salt and pepper in a bowl. Set aside.
Coat your tortellini mixture with your Greek yogurt
Chill and devour!
Serving: 1 Cup
