A delicious guac with a twist! Adding corn and other vegetables gives this guacamole a great texture, and the cotija cheese complements the Mexican flavors perfectly!
1 Tbsp cilantro chopped (to taste)
1 cup corn canned, drained & rinsed
1/4 cup cotija cheese or sub feta
1 jalapeño diced, (seeded if desired)
1 Tbsp lime juice
1/4 cup onions diced
salt to taste
1/4 cup tomatoes diced
Mash your avocados to your desired consistency (some prefer lumpier or creamier guac).
Mix in remaining ingredients, seasoning to taste.
Enjoy, or chill before serving!
Serving: 1 Cup
