Corn Guacamole With Cotija

A delicious guac with a twist! Adding corn and other vegetables gives this guacamole a great texture, and the cotija cheese complements the Mexican flavors perfectly!

Ingredients

  • 2 avocados
  • Black pepper
  • 1 Tbsp cilantro chopped (to taste)
  • 1 cup corn canned, drained & rinsed
  • 1/4 cup cotija cheese or sub feta
  • 1 jalapeño diced, (seeded if desired)
  • 1 Tbsp lime juice
  • 1/4 cup onions diced
  • salt to taste
  • 1/4 cup tomatoes diced
  • Procedure

  • Mash your avocados to your desired consistency (some prefer lumpier or creamier guac).
  • Mix in remaining ingredients, seasoning to taste.
  • Enjoy, or chill before serving!
