Pack some quick and wholesome fuel into your day with these cookie energy bites! And, with only 2 main ingredients, they’re SO easy to make. Prunes are full of fiber and natural sweetness, so no sugars or sweeteners are needed in this recipe! And, the coconut flour gives these bites the texture and flavor of an ACTUAL cookie. An easy healthy snack you can whip up anytime!
1 cup prunes
2/3 cup water
2/3 cup coconut flour
pinch of salt (optional)
1 cup prune purée
vanilla extract (optional)
To make your prune puree, add 1 cup of prunes and 2/3 cup water to a food processor or blender. Blend until smooth and free of chunks.
Add vanilla and salt to mixture. Add coconut flour a little bit at a time, blending as you go, until you have a thick dough. You may need to scrape down the sides of your food processor!
Once mixture dough is formed and free of chunks, roll into balls with your hands. (I used a 2-teaspoon cookie scoop to portion my balls!)
Enjoy immediately, or refrigerate for up to 1 week!
