Who doesn’t love an easy slow cooker recipe? Just throw these ingredients into the slow cooker at the beginning of the day for a juicy and flavorful dinner in the evening! You can also freeze this healthy chicken recipe in a freezer bag, so it’s ready for you to cook anytime!
15 oz black beans canned, drained & rinsed
1.5 pounds (lbs) boneless skinless chicken breast cut into cubes
1/2 cup cilantro roughly chopped
1 tsp cumin
16 oz frozen corn
2 garlic cloves minced
2 limes juiced
pepper (to taste)
1/2 cup red onion chopped
salt (to taste)
Add all ingredients to a freezer bag. Mix and close. Store up to 3 months.
Thaw out the bag in the fridge for 24 hours before making.
Cook on low in a slow cooker or crockpot for 4 to 6 hours.
Serve with tortillas, on a salad, or as a burrito bowl with rice!
Top with sour cream, guacamole, salsa, cheese, or your favorite toppings!
