Cilantro Lime Chicken

Who doesn’t love an easy slow cooker recipe? Just throw these ingredients into the slow cooker at the beginning of the day for a juicy and flavorful dinner in the evening! You can also freeze this healthy chicken recipe in a freezer bag, so it’s ready for you to cook anytime!


  • 15 oz black beans canned, drained & rinsed
  • 1.5 pounds (lbs) boneless skinless chicken breast cut into cubes
  • 1/2 cup cilantro roughly chopped
  • 1 tsp cumin
  • 16 oz frozen corn
  • 2 garlic cloves minced
  • 2 limes juiced
  • pepper (to taste)
  • 1/2 cup red onion chopped
  • salt (to taste)
  • Procedure

  • Add all ingredients to a freezer bag. Mix and close. Store up to 3 months.
  • Thaw out the bag in the fridge for 24 hours before making.
  • Cook on low in a slow cooker or crockpot for 4 to 6 hours.
  • Serve with tortillas, on a salad, or as a burrito bowl with rice!
  • Top with sour cream, guacamole, salsa, cheese, or your favorite toppings!
