Chocolate and strawberries is a classic combo! Why not add it to a delicious muffin for a trio of flavor goodness!?
1/2 cup almond milk
1 1/2 tsp baking powder
1/2 tsp baking soda
3 Tbsp chocolate chips dark , to taste
1 tsp cinnamon
3 Tbsp coconut oil
1/4 cup coconut sugar
1 cup greek yogurt
2 cups oat flour
1/3 cup stevia to taste, or sweetener of choice
1/2 cup strawberries diced
1 tsp vanilla extract
Preheat oven to 400ºF.
Combine wet and dry ingredients separately, except for strawberries & chocolate chips.
Combine wet and dry mixes together, thoroughly combining.
Stir the strawberries and chocolate into your mixed batter.
Spoon the batter into a sprayed muffin tin. I use an ice cream scoop to get a perfect 12 muffins.
Bake for 18–20 minutes, until a toothpick comes out clean and golden brown.
Allow to cool slightly before removing and devouring.
Serving: 1 Muffin
