Chickpea Salad

Salad does not have to be complicated, and it does not have to be boring! This chopped salad is so full of flavor, but it’s SO easy to make! Feel free to get creative with your favorite veggies!

Ingredients

  • 3 cups Cooked chickpeas (or two 15 oz. cans)
  • 2 Cucumbers chopped
  • 2 Green bell peppers chopped
  • 1 Tbsp Olive oil
  • 1/2 Onion chopped
  • 1/2 cup Parsley chopped
  • Pepper to taste
  • 3 Roma tomatoes chopped
  • Salt to taste
  • Procedure

  • Toss all ingredients together.
  • Drizzle with olive oil and season with salt & pep to taste.
