This homemade dairy-free cream cheese uses cashews as a base! The consistency is SO much like cream cheese, you won’t believe it!
1 tsp apple cider vinegar
chives finely chopped
1 lemon juiced
2 Tbsp nutritional yeast
1 cup raw cashews soaked 4 hours
1/4 tsp salt
1-2 Tbsp water if necessary for consistency
Drain cashews from water and blend in a food processor until smooth (a few minutes).
Add nutritional yeast, lemon juice, salt, and apple cider vinegar. Blend, adding water if needed to adjust consistency.
Stir in chopped chives, or your favorite flavorings!
Yields about 1 cup cashew cream cheese.
Serving: 1 Tbsp serving
