Caffeinated Chunky Monkey Pops

Take the iced coffee you love to the next level and freeze it into a power pop! With just a hint of cocoa, some peanut butter, and whole banana slices, these pops are loaded with flavor, texture, and energy! An indulgent dessert that’s still healthy and light.

Ingredients

  • 2 bananas (one sliced and put into popsicle mold)
  • 1 tsp cinnamon
  • 1 Tbsp cocoa powder
  • 1 cup coconut milk
  • 1/3 cup coffee concentrate
  • 1 Tbsp maple syrup
  • 2 Tbsp peanut butter
  • Procedure

  • Add all ingredients to a blender (besides 1 banana) and blend until well integrated.
  • Slice remaining banana and stick slices against side of popsicle mold.
  • Pour mixture into popsicle molds, cover, and insert sticks.
  • Freeze 6-8 hours or overnight.
  • Once frozen, remove desired pops from mold and enjoy! (You may need to allow pops to sit outside of the freezer for a minute or two in order to easily remove from mold.)
  • You can leave pops in molds in freezer for a few days.
  • For longer storage, remove from molds and place in individual freezer bags, or in an airtight plastic container with layers of wax paper or plastic wrap in between. Will last 3 to 4 weeks stored this way.
