Butternut Squash Oatmeal Power Bowl

This warm and fuel-filled breakfast is the perfect way to start a cold morning—or any morning! It’s full of yummy Fall flavors and is SO easy to make. I love this comforting oatmeal topped with walnuts, pumpkin seeds, chopped dates, apple slices, and a bit of maple syrup, but feel free to get creative with your favorite toppings and mix-ins! If you don’t want to use butternut squash, you could also use pumpkin purée or sweet potato purée instead.


  • 3 Tbsp butternut squash puree
  • 1/4 tsp cinnamon
  • 3/4 cup milk of choice
  • 1/8 tsp nutmeg
  • pinch of salt
  • 1/2 cup quick oats
  • 1/4 tsp vanilla extract
  • Optional Toppings
  • apple slices
  • chopped dates
  • chopped walnuts
  • maple syrup
  • pumpkin seeds
  • Procedure

  • Combine oats and milk in saucepan over medium heat.
  • Bring to a boil, then reduce heat to simmer.
  • Stir until consistency is reached.
 Stir in other ingredients, heat through 1 minute.
  • Serve with desired toppings and enjoy!
