These little nuggets are packed with veggies! It’s easier to get kids to eat veggies when the veggies taste good!
2 cups broccoli florets
1/3-1/2 cup egg whites
2 garlic cloves
1/2 tsp garlic powder
3/4 cup oats
1/2 cup parmesan
1/2 tsp salt
Preheat oven to 375ºF.
Combine all ingredients in a food processor. Start with 1/3 cup egg whites and add more to thin the mixture if it seems too thick. It should be like a thick pancake batter consistency.
Transfer to a mini muffin tin. I was able to get 24 mini muffin
Bake for 12-15 minutes, until the tops begin to brown and spring back slightly when touched.
Allow to cool before removing and devouring!
Serving: 1 nugget
