Broccoli Nuggets

These little nuggets are packed with veggies! It’s easier to get kids to eat veggies when the veggies taste good!

Ingredients

  • 2 cups broccoli florets
  • 1 egg
  • 1/3-1/2 cup egg whites
  • 2 garlic cloves
  • 1/2 tsp garlic powder
  • 3/4 cup oats
  • 1/2 cup parmesan
  • 1/2 tsp salt
  • Procedure

  • Preheat oven to 375ºF.
  • Combine all ingredients in a food processor. Start with 1/3 cup egg whites and add more to thin the mixture if it seems too thick. It should be like a thick pancake batter consistency.
  • Transfer to a mini muffin tin. I was able to get 24 mini muffin
  • Bake for 12-15 minutes, until the tops begin to brown and spring back slightly when touched.
  • Allow to cool before removing and devouring!
