A new take on stuffed peppers! These babies are stuffed with breakfast favorites! Delicious, nutritious and veggie packed! Great for ANY meal of the day!
4 slices bacon regular or turkey, optional
4 bell peppers
black pepper to taste
4 eggs or egg whites/substitute (about 1 cup)
salt to taste
1 cup vegetables additional, if desired
Slice your peppers lengthwise, removing about 1/3 of each. Dice up the top third to use inside of the filling mixture.
Parboil your pepper vessels by adding them to boiling water for 3–5 minutes, until tender. Remove with tongs and add to a baking dish, open side up. Set aside.
Preheat oven to 400F.
Saute´ the diced pepper pieces (and any additional veggies if desired), along with your eggs, until scrambled. Season with salt & pep.
Stir in cooked bacon/sausage.
Transfer mixture into peppers, distributing evenly. Add a little water to the bottom of the baking dish (about 1/4
Bake the peppers for about 15 minutes.
