Blueberry Mug Muffin

Clean single serve muffins are a lifesaver when those cravings hit!

Ingredients

  • 2 Tbsp almond milk
  • 1/2 tsp baking powder
  • 2-3 Tbsp blueberries
  • pinch of cinnamon
  • 2 tsp coconut oil
  • 1/4 cup oat flour
  • 1/8 tsp salt
  • 1-1 1/2 Tbsp sweetener
  • 1/8 tsp vanilla extract
  • Procedure

  • Mix dry ingredients.
  • Add oil and mix until you reach a sandy consistency.
  • Add milk and stir to combine, it should be a batter consistency.
  • Mix in blueberries.
  • Microwave 90-120 seconds.
