Chicken salad is one food you can have so much flavor fun with and still keep it super healthy and protein packed! This Blueberry Chicken Salad is stuffed into lettuce wraps instead of bread for a delicious low carb meal option! This salad is also great plain, in a wrap or on top of a salad! So versatile you can easily cater it to your preferences. This recipe has great texture with creamy yogurt, crunch vegetables, and sweet and juicy blueberries!

Ingredients

  • black pepper to taste
  • 1/4 cup blueberries
  • 2 Tbsp celery chopped
  • 6 oz chicken boneless skinless or canned
  • 1 tsp dijon mustard
  • 2 Tbsp greek yogurt
  • 1 tsp lemon juice
  • lettuce wraps optional, for serving
  • 1/4 cup red bell pepper chopped
  • salt to taste
  • Procedure

  • Mix wet ingredients together, and season with salt & pep to taste.
  • Toss dry ingredients in the wet
  • Chill, and enjoy!
