Would you ever guess that fluffy, delicious WAFFLES could help you fit more VEGGIES into your diet?! These scrumptious zucchini waffle sticks can! Just stir grated zucchini into the batter, and you won’t even notice the difference. Combined with blended oats and a ripe banana, you’ve got a fuel-filled, budget-friendly meal! I used a mini waffle-stick iron, but this batter will also work in most standard waffle irons.
1 tsp baking powder
1 tsp cinnamon
1/3-1/2 cup milk of choice (adjust to desired consistency)
2 cup oats
1 ripe banana
1 tsp sweetener of choice
1 tsp vanilla
1 cup zucchini grated
Blend all ingredients together, except zucchini.
Add batter to a mixing bowl and stir in zucchini.
Pour batter into waffle iron and cook, according to the directions provided by your waffle iron. (I used a mini waffle-stick iron, but you could also use a standard waffle iron. I find it helps to use a cookie scoop (for mini) or measuring cup to help pour the batter over the iron.)
When waffle or waffle sticks are done cooking, carefully remove from iron. Serve warm with maple syrup, Greek yogurt sweetened with maple syrup and cinnamon, or whatever you like!
Yields ~20 waffle sticks.
