HO.LEEEEEE. SMOKES! This is one of my most proud recipes to date! I can’t even believe how good these black bean cake brownies turned out! They are so moist, light, satisfying, delicious and SO GONE. Seriously. So. So. So. Good.
2 Tbsp almond butter
1.5 tsp baking powder
1 can of black beans drained & rinsed
2-3 Tbsp chocolate chips mini dark (for topping), optional
1/2 cup cocoa powder
1 Tbsp coconut oil
2 Tbsp egg whites
2/3 cup stevia to taste (or sweetener of choice)
1 tsp vanilla
Preheat oven to 350F (180C).
Combine all ingredients (except chips) in food processor.
Pour batter into 8in baking dish (mine may have been 9?) sprayed with cooking spray.
Place chips on top.
Bake 15-20 minutes (15 was perfect for mine).
Serving: 1 brownie
