Today it’s the 2nd birthday of Mind Over Munch! 2 years of deliciousness deserves MORE deliciousness to celebrate! These birthday cake pancakes are protein packed without any powder! This batter will also work with a waffle maker!
1 tsp baking powder
1-2 Tbsp coconut flour
1/4 cup cottage cheese low fat (can sub Greek yogurt)
1/2 cup egg whites
1/4 cup oats
pinch of salt
2 tsp sprinkles not optional
1/2 tsp stevia to taste, or sweetener of choice
Combine all ingredients except for sprinkles in a small blender. Adjust consistency to reach a typical pancake batter by adding coconut flour to thicken or almond milk to thin, if necessary. Stir your sprinkles into the batter.
Preheat your skillet or griddle.
Cook as you would normal pancakes– ladle your batter onto the heated and sprayed pan/surface and allow to spread into your pancake shape. Once it begins to bubble (after 1-2 minutes) flip the pancake and allow it to cook another few minutes on the other side. Batter will yield 5-6 pancakes, depending on size.
