Beef and Broccoli Bowl with Cauliflower Rice

Try a different spin on the much-loved burrito bowl—beef & broccoli! Cauliflower rice is a great option to keep this bowl low-carb, and you won’t even miss the rice. I personally like to cook the beef and veggies using ghee, to add a rich, nutty flavor and loads of healthy nutrients. Plus, with a sprinkle of red pepper flakes, this dish has a serious flavor kick! If you’re meal prepping for the week, just double the recipe, portion out your servings, and heat up in the microwave when ready to enjoy!


Bowl Ingredients
  • 4 cups broccoli florets
  • 3 cups cauliflower rice
  • 2 tsp garlic paste
  • 1.5 Tbsp ghee or grass-fed butter, or coconut oil
  • 1 tsp ginger paste
  • 1 pound (LB) organic grass-fed ground beef
  • Sauce
  • 2 Tbsp coconut aminos or soy sauce
  • pepper, to taste
  • 1/4 tsp red pepper flakes (if desired)
  • 1/4 tsp salt
  • 1 Tbsp sesame oil
  • Optional Toppings
  • 1/2 avocado sliced
  • 2 green onions finely chopped
  • sesame seeds
  • Procedure

  • Add butter, ghee, or coconut oil to a pan over medium-high heat and allow to melt.
  • Add garlic and ginger paste. Cook until fragrant.
  • Add beef and cook until no longer pink.
  • Add broccoli florets and cauliflower rice. Season with salt and pepper. Mix to combine.
  • Cook until broccoli is bright and vibrant and cooked through to your liking.
  • Lower the heat and add your sauce ingredients. Toss to coat and season to taste.
  • Store in the fridge, or freeze if desired!
  • Enjoy warm, topped with avocado slices, sesame seeds, and green onions—or your favorite toppings!
