Bean Patties

Awesome meal prep recipe! These bean patties are super simple, but still packed with flavor – and absolutely vegan!

Ingredients

  • 15 oz Black beans
  • 1/2 cup Cilantro
  • 1/2 tsp Coriander
  • 15 oz Corn
  • 1/2 tsp Cumin
  • 3 Tbsp Flour of choice
  • Lemon juice
  • Lemon zest
  • 1/4 tsp Paprika
  • Salt
  • Procedure

  • Preheat oven to 425°F (°C).
  • Combine all ingredients in a food processor, scraping down the sides as necessary. It’s fine if there are chunks!
  • Scoop mixture out onto a baking sheet lined with foil and sprayed. Press down into a patty shape.
  • Bake 8–10 minutes on each side. Lasts 4-5 days in the fridge.
