These sliders are so juicy, tender, and flavorful—you won’t believe they’re made of FRUIT! When the unripe flesh from a jackfruit is pulled apart, it resembles the texture of pulled meat. This recipe is cooked low and slow, so it’s bursting with sweet, tangy BBQ flavor! It’s delicious served on a bun with my creamy, crunchy avocado slaw, or on its own!
1/2 cup broth
2 cans of jackfruit (in brine or water, not syrup)
1/2 cup chopped onion
1 Tbsp garlic minced
3/4 cup low-sugar barbecue sauce (vegan if necessary)
1 Tbsp olive oil
Drain and rinse jackfruit.
Cut into smaller pieces (from core to edge) and pull apart with two forks to create pulled texture.
Add olive oil to a pan over medium heat and sauté onions and garlic. Cook 5 minutes, until tender and fragrant.
Add jackfruit, broth, and barbecue sauce. Stir and reduce heat to medium low for 20 to 45 minutes. (Cooking low and slow adds more flavor).
Remove lid and stir occasionally as it cooks.
Serve barbecue jackfruit and and avocado slaw on a bun for a delicious vegan slider!
