Baked Oatmeal Muffins

An easy, versatile and portable breakfast!

Ingredients

  • 1 cup almond milk
  • 1 1/2 tsp baking powder
  • 1 1/2 bananas
  • 1 tsp cinnamon
  • 1 egg or flax egg
  • 2 cups oats
  • 1/4 tsp salt
  • 2 Tbsp sweetener
  • 1 tsp vanilla extract
  • Procedure

  • Preheat oven to 375°F.
  • Combine wet and dry ingredients separately.
  • Mix dry ingredients into wet. Set aside and allow to thicken for about 10 minutes.
  • Line a muffin tin with liners.
  • Transfer ¼ cup of batter into each muffin tin.
  • Top with desired toppings (I used blueberries, almonds, cranberries, and dairy-free chocolate.)
  • Bake 20-25 minutes.
