B.L.A.T. Chopped Salad

Full of flavor and color! This isn’t your average salad – no beds of green necessary! Fun and super refreshing for summer! Loads of nutrition and flavor! Try out different oils for dressings but remember– a little goes a long way! Count colors, not calories!

Ingredients

  • 2 cups Arugula chopped
  • 1 Avocado
  • 2 tsp Avocado oil
  • 1/4 cup Blue cheese
  • 1 cup Corn
  • 1 pint Grape tomatoes chopped
  • 1 Lime juice & zest
  • 1/4 tsp Pepper
  • 1/4 tsp Salt
  • 2 cups Spinach chopped
  • 4 slices Turkey bacon chopped
  • Procedure

  • Whisk together dressing ingredients (oil, lime, salt & pep).
  • Toss salad ingredients together and coat well in the dressing.
