This ice cream is a great option for using up those avocados that are on the brink of being overripe, AND requires to ice cream maker! Creamy, naturally sweet and totally satisfying! Packing those lovely unsaturated fats and no guilt at all!
1-2 Tbsp almond milk
2 avocados sliced, frozen
1/2 banana frozen
2 tsp honey to taste (sub maple syrup for vegan)
1 tsp lime juice
Add all ingredients to a food processor. Blend to combine until creamy and smooth.
Adjust honey and lime juice to taste, and almond milk to consistency. It should be creamy and thick like a soft ice cream.
Enjoy as is, OR return to the freezer for 30-45 minutes and allow to harden up a bit like more traditional ice cream!
