Creamy, sweet, and will keep you cool for the summer!
1/2 cup coconut milk lite or carton
1 Tbsp coconut sugar
1 Tbsp honey (sub maple syrup for vegan)
3 Tbsp lime juice
1 tsp vanilla extract
1/2 cup water
In a pot, head water and coconut milk. Add coconut sugar and honey, stirring to combine, allowing heat to dissolve. You do NOT need to bring to a boil. Once sugar is integrated, remove from heat.
Combine liquid mixture with remaining ingredients in a food processor.
Pour mixture into popsicle molds. I also topped my popsicles off with a bit of coconut milk!
Serving: 1 popsicle
