The truth about biscuits: GOOD flaky biscuits will need some sort of fat. Coconut oil is a healthy dairy-free, vegan fat option that we can include in our diet without worrying about animal products or hydrogenated oils. Enjoy these babies with a savory or sweet dish!
3/4 cup almond milk or milk of choice
1/4 cup coconut oil solid
2 cups self-rising flour **See note below
Preheat oven to 425°F.
Combine your flour with baking powder and salt if not using self-rising flour.
Use a pastry cutter or two forks to combine your solidified oil (solid but soft, not hard), until it reaches an even, crumbly texture.
Stir in your milk and mix to form your biscuit dough.
Roll the dough out until it’s about 1⁄2” thick.
Use a biscuit cutter or small can to cut out your biscuits. Re-roll out your dough until you’ve completed all of your biscuits.
Place on a baking sheet lined with parchment and sprayed, and bake for 10 minutes.
Serving: 1 Biscuit
